Black Bean Burgers

Black bean burgers are a delicious, healthy alternative to traditional hamburgers. They are high in fiber and protein and low in fat and calories. Black bean burgers can be made at home with just a few simple ingredients or purchased pre-made at the grocery store.

To make a black bean burger, start by cooking black beans in water until they are soft. Then, mash the beans with a fork or potato masher. Next, add diced onion, garlic, bread crumbs, an egg, and seasonings to the mashed beans and mix until well blended.

Form the mixture into patties and cook on a preheated grill or in a skillet on the stovetop. Black bean burgers can be served on a bun with your favorite toppings, or alone with a side of salad or roasted vegetables.

Roasted Vegetables

If you’re looking for a delicious and easy way to spruce up your weeknight dinners, look no further than roasted vegetables! Roasting is a simple cooking method that brings out the natural sweetness of vegetables, and it couldn’t be easier to do. Simply toss your veggies with a little olive oil, salt, and pepper, and roast in a hot oven until tender and slightly browned.

There are endless possibilities when it comes to what vegetables to roast, but some of our favorites include Brussels sprouts, cauliflower, carrots, and potatoes. Serve your roasted veggies as a side dish or add them to a salad or grain bowl for a complete meal. No matter how you eat them, we guarantee you’ll be hooked on roasted vegetables after just one bite!

Quinoa Salad

One of the best things about summer is all the fresh produce that’s available. This quinoa salad is the perfect way to take advantage of all that summer has to offer. Quinoa is a nutrient-rich grain that’s packed with protein, and it pairs perfectly with the season’s freshest veggies. This salad can be served as a side dish or a main course, and it’s sure to please everyone at the table.

To make this salad, start by cooking the quinoa according to the package directions. Once it’s cooked, let it cool slightly. While the quinoa is cooking, prep the vegetables. I like to use cherry tomatoes, cucumber, bell pepper, and red onion, but you can use whatever you have on hand. Once the quinoa is cool, add in the veggies and give everything a good stir.

For the dressing, I like to use a simple vinaigrette made with olive oil, red wine vinegar, and a little bit of Dijon mustard. Season it to taste with salt and pepper, then give the salad a final stir. Serve it cold or at room temperature. Enjoy!

Ratatouille

Anyone who knows me knows that I am obsessed with the movie Ratatouille. I’ve seen it at least 50 times (I’ve lost count at this point) and I quote it constantly. So, when I was asked to write about ratatouille, I jumped at the chance.

For those of you who haven’t seen the movie, it is about a rat named Remy who dreams of becoming a chef. He is eventually able to realize his dream by teaming up with a young boy named Linguini who works in a restaurant. Together, they create some of the most amazing dishes that have ever been seen.

The movie is not only incredibly entertaining, but it also has a great message about following your dreams. It is one of my all-time favorite movies and I highly recommend it to everyone.

Now, on to the ratatouille itself. This dish is traditionally made with vegetables such as eggplant, zucchini, tomatoes, and peppers. It is usually served as a side dish, but I like to eat it as a main course.

Bean Enchiladas

Bean enchiladas are a delicious and healthy option for a quick and easy weeknight meal. They are packed with fiber and protein from the beans and are a great way to use up leftover tortillas. Enchiladas can be made with any type of bean, but black beans and pinto beans are the most common.

To make bean enchiladas, start by heating up a can of refried beans in a pot on the stove. Spread the beans evenly over a warm tortilla, and then top with shredded cheese and your favorite enchilada sauce. Roll up the tortilla, and place it in a baking dish. Repeat with remaining tortillas.

Bake the enchiladas in a 350-degree oven for about 20 minutes, or until the cheese is melted and bubbly. Serve with a dollop of sour cream and a side of rice or beans. Enjoy!
