Anyone who knows me knows that I am obsessed with the movie Ratatouille. I’ve seen it at least 50 times (I’ve lost count at this point) and I quote it constantly. So, when I was asked to write about ratatouille, I jumped at the chance.

For those of you who haven’t seen the movie, it is about a rat named Remy who dreams of becoming a chef. He is eventually able to realize his dream by teaming up with a young boy named Linguini who works in a restaurant. Together, they create some of the most amazing dishes that have ever been seen.

The movie is not only incredibly entertaining, but it also has a great message about following your dreams. It is one of my all-time favorite movies and I highly recommend it to everyone.

Now, on to the ratatouille itself. This dish is traditionally made with vegetables such as eggplant, zucchini, tomatoes, and peppers. It is usually served as a side dish, but I like to eat it as a main course.

Bean Enchiladas

Bean enchiladas are a delicious and healthy option for a quick and easy weeknight meal. They are packed with fiber and protein from the beans and are a great way to use up leftover tortillas. Enchiladas can be made with any type of bean, but black beans and pinto beans are the most common.

Lentil Shepherd’s Pie

This dish is healthy and hearty, perfect for a winter meal. It is easy to make and can be made ahead of time.


  • 1 cup dry lentils
  • 4 cups vegetable broth
  • 1 large onion, diced
  • 4 carrots, peeled and diced
  • 4 celery stalks, diced
  • 1 garlic clove, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 2 cups frozen peas
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt and pepper


1. Preheat oven to 375 degrees F.

2. In a large pot, combine the lentils, vegetable broth, onion, carrots, celery, garlic, thyme, and tomato paste.

3. Bring to a boil, then reduce heat and simmer for 30 minutes.

4. Stir in the peas, then pour the mixture into a large baking dish.

5. In the same pot, boil the potatoes until tender. Drain, then mash with the milk and butter. Season with salt and pepper.

6. Spread the mashed potatoes over the top of the shepherd’s pie
